How Do I Cook Spaghetti Squash?

In the fall, start looking for delicious seasonal produce in your local supermarket. Spaghetti squash is a much-beloved vegetable that begins making an appearance in the early fall. Just as the name implies, cooked spaghetti squash can be shredded into slender “noodles” and eaten just like pasta. Health-conscious foodies love this squash because it contains substantially fewer calories and carbohydrates than pasta, with more fiber.

 

Preparing Spaghetti Squash

Spaghetti squash has a very hard rind, and it can be tricky to cut. Poke holes in a line, from top to bottom, with a paring knife. Then, place the whole squash in the microwave for five minutes. This softens it so that it’s easier to cut. Use a very sharp knife to slice off the top and bottom ends. Then, slice it in half vertically. Scoop out the seeds.

 

Roasting Spaghetti Squash

There are a few different ways to cook spaghetti squash, but arguably roasting it produces the best flavor. Preheat the oven to 400 degrees Fahrenheit. Rub a little olive oil on the insides of the squash halves. Sprinkle a little salt. Line a baking pan with parchment paper. Place the halves on the parchment paper so that the cut sides are down. Bake the squash for 40 to 60 minutes, or until you can easily pierce it with a fork.

 

Finishing the Meal

Shred or fluff up the interiors with a fork to form the “noodles.” You can add toppings to the noodles right in the squash rind, or you can remove the noodles before serving. Spaghetti squash goes well with a wide spectrum of delicious flavors. You can add garlicky spinach, marinara sauce, and mozzarella to create a meal similar to pizza, for instance. Or, much like rice, you can top the squash with a curry or stew.
